Trader Joe's Canned Corn

I don't know what came over me, but about a month ago, I became obsessed with this corn. Obsessed, I tell you! I buy it by the armful (69 cents a can!) and eat it with everything: as a side with roast chicken and brussels sprouts, on top of tuna mayonniase and a baked potato (that's real English pub food right there) and even just scooped straight by the spoonful from the can. I CANNOT GET ENOUGH OF THIS CORN.
The funny thing is, I don't think I've ever eaten canned corn before in my life: I've always preferred the on-the-cob style, or maybe even frozen corn in a pinch. But then I was on this nerdy message board a little while ago and this man couldn't stop talking about this corn: how about how fresh it was, how crisp it was, how much better it was than any other brand of canned corn he'd ever tried. And so I picked some up the next time I was in Trader Joe's (when am I not in Trader Joe's?) and the next thing I know, I'm loading those bright yellow cans into my shopping cart every week, appearing, for all intents and purposes, like a person who thinks the world is coming to an end. Is there some sort of twelve-step program for canned corn addicts, do you think? Can you sign me up?

Okay, don't make fun of me (well, if you must, go right ahead), but what is tuna mayonnaise? Is it a thing? Or is it merely tuna and mayonnaise?

Can I tell you the best most simple way ever to make this corn? Take a large sauté pan, toss in a couple of pats of butter. While they are melting, drain the corn really well then toss it into the pan with the butter. Give it a good stir and let it cook for a while (it will get all sizzly). Occasionally stir it and toss in a little salt and some black pepper (don't skip this step! It's so important!) and let it cook for 8 to 10 minutes. Some of the kernels will start to get brown and caramelized and that's how you know it's done. It is DELICIOUS. Like, stand at the stove and eat it out of the pan so no one else will get any delicious. Something about the pepper mixed with the sweet corn is perfection. You'll love this.

You might have a vitamin or mineral deficiency and your body is craving a food that has lots of whatever you need. Might be time for a physical and blood workup.

Ha! Tuna mayonnaise is exactly that..........tuna and mayonnaise. I guess you'd call it tuna salad in America? Damn these cultural differences. Anyway, it's excellent on top of baked potatoes (which are jacket potatoes in England) with some corn mixed in. I ate this pretty much every week from the years of 1991 through 2002, since it's cheap, filling, and easy. I do have to admit to a snobby aversion to American canned tuna, though; I get my mother to bring English tuna over from Singapore or stock up on it when I'm back in the UK.

Actually, yes...there is a corn shortage coming if you believe what the economists are saying lately. So buy lots and stock up! (rice too!)

Not to go off subject, but can I ask what the difference is between English tuna and American tuna? Not only am I big fan of tuna salad, but I am also a big fan of tuna salad on a baked potato, don't think I've ever added corn, but I just might give it a try!

My husband discovered TJ's canned corn a couple years back. He kept raving and raving about how good it was and I was beginning to wonder if he was really the man I married. He is, like, Mr. Fresh-Food-Chef ... so his obsession on this CANNED corn threw me. Well, he and you are right! It is one of the best things ever!

Oh, how I miss Trader Joe's. I love that corn, too. I have never tried it the way I am about to propose, but no doubt it is fantastic. I have only ever used corn on the cob for this, but the canned stuff will save you the trouble of having to slice off the kernels...
OK. This comes to you via the "corn in a cup" buggies in Chicago, via Mexico City.
Take the corn (usually, the cobs are heated from being on the "bar-bee") so I guess heat the canned corn. After heated, add butter, mayo, salt & pepper, some ground cayenne pepper, and fresh lime juice. And then, sprinkle some parmesan/reggiano cheese atop.
Perhaps it sounds a tad looney, but I bet you will be hard pressed to have corn any other way after this "corn in a cup" ravishes you.
